This is a versatile, easy recipe. Just throw the vegetables you have into a pan, sauté, and serve with noodles, all under 30 minutes!
I love this when I’m trying to clean out my fridge. When I have a spare onion or bell pepper, or some spinach I haven’t used up, into the pot it goes! Kielbasa sausage or chicken sausage is great to keep in the freezer or fridge for those nights when you need to scramble.

Ingredients
- 1 – 16 oz package noodles
- 1 – 12 oz package kielbasa*, sliced into 1″ pieces
- 4 cups spinach
- 1/2 medium white onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, cut into 1″ pieces
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 2 teaspoons dried basil
- 2 tablespoons extra virgin olive oil
- Parmesan cheese for serving

Add a teaspoon of salt to a large pot of water and bring to a boil.

Cook the pasta according to package directions (usually 10 minutes) while stirring frequently to prevent sticking. After cooking, drain in a colander.

At the same time, in a large frying pan heat a tablespoon of olive oil on medium heat. Sauté the onion until softened, about 5 minutes. Add the garlic and sauté until fragrant.

Add the sliced kielbasa, bell pepper, and basil. Sauté, making to flip the sausage on both sides to allow for light searing*.

Once the meat is heated through, add the spinach just until wilted. Season with salt and pepper.

Combine the pasta, sausage, and vegetable into the large pot. Drizzle with a tablespoon of olive oil, and sprinkle with Parmesan cheese.

Notes:
- This recipe works great with chicken sausage instead of kielbasa
- Remember, the sausage should be cooked through already, so you are just heating it through and adding a little color. If you bought uncooked sausage, please follow the package’s instructions.
- I frequently add mushrooms to this recipe too. They work great!
